Main Ingredients
  • 1 pound ground turkey Ensure it's Halal-compliant.
  • 2 cups cooked rice Prepare in advance.
  • 1/4 cup teriyaki sauce
  • 1 tablespoon olive oil For cooking turkey and veggies.
Vegetables
  • 1 bell pepper sliced Any color bell pepper works.
  • 1 cup broccoli florets
  • 2 green onions chopped For garnish.
  • to taste sesame seeds For garnish.

Method
 

Preparation
  1. Cook your rice according to package instructions and set aside.
Cooking
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the ground turkey to the skillet, breaking it apart and cooking until no longer pink, about 6-8 minutes.
  3. Add the sliced bell pepper and broccoli florets to the cooked turkey; sauté for about 3-4 minutes until veggies are tender but still crunchy.
  4. Pour in the teriyaki sauce and stir well to coat everything evenly; let simmer for 2 minutes.
  5. Scoop cooked rice into bowls, top with the turkey mixture, and garnish with green onions and sesame seeds.

Notes

Substitutions: Lean ground chicken can replace ground turkey. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for 1 month. Reheat in a pan or microwave with a splash of water.
