Preparation
- If you haven’t already cooked your chicken, boil or bake it until fully cooked. Once cooled, shred the chicken using two forks or your hands.
- In a large mixing bowl, combine the shredded chicken, mayonnaise, Greek yogurt (if using), chopped celery, halved grapes, sliced almonds, Dijon mustard, salt, and pepper.
- Use a spatula or spoon to gently mix everything until well combined. Make sure all the chicken is coated with the dressing and adjust seasoning if needed.
- For enhanced flavor, let the salad chill in the refrigerator for about 10 minutes before serving. This allows the flavors to meld beautifully.
- Arrange lettuce leaves on plates and scoop the chicken salad onto the lettuce. Serve immediately and enjoy!
Notes
For a lighter version, swap out mayonnaise for more Greek yogurt. You can also add chopped walnuts or pecans for extra crunch.
