  • 2 cups cooked chicken, shredded Use leftover chicken or rotisserie for ease.
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt Optional for a lighter version.
  • 1/4 cup celery, chopped
  • 1/4 cup grapes, halved
  • 1/4 cup almonds, sliced
  • 1 tablespoon Dijon mustard
  • to taste Salt and pepper

Preparation
  1. If you haven’t already cooked your chicken, boil or bake it until fully cooked. Once cooled, shred the chicken using two forks or your hands.
  2. In a large mixing bowl, combine the shredded chicken, mayonnaise, Greek yogurt (if using), chopped celery, halved grapes, sliced almonds, Dijon mustard, salt, and pepper.
  3. Use a spatula or spoon to gently mix everything until well combined. Make sure all the chicken is coated with the dressing and adjust seasoning if needed.
  4. For enhanced flavor, let the salad chill in the refrigerator for about 10 minutes before serving. This allows the flavors to meld beautifully.
  5. Arrange lettuce leaves on plates and scoop the chicken salad onto the lettuce. Serve immediately and enjoy!

Notes

For a lighter version, swap out mayonnaise for more Greek yogurt. You can also add chopped walnuts or pecans for extra crunch.
