- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until golden and fragrant (about 3-4 minutes).
- Toss in the diced chicken breast, and season with salt and pepper. Cook until browned and fully cooked through, approximately 5-6 minutes.
- Stir in the chopped cauliflower, followed by the chicken broth. Bring this mixture to a gentle boil, then reduce the heat to a simmer. Allow it to cook for about 10-15 minutes until the cauliflower is tender.
- Once the cauliflower is tender, use an immersion blender to puree the soup until smooth (or you can transfer it to a blender in batches). If you prefer a chunkier soup, feel free to blend only half.
- Stir in the milk or cream and heat for an additional 2-3 minutes. Taste and adjust seasoning if needed!
