  • 4 cups broccoli florets

Method
 

Preparation
  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté for about 3 minutes until translucent.
  2. Add the minced garlic and continue to sauté for another 1-2 minutes until fragrant.
Cooking
  1. Stir in the broccoli florets and let them cook with the onion and garlic for about 2 minutes.
  2. Pour in the vegetable broth, increase the heat, and bring to a low boil. Reduce the heat and let it simmer for about 10 minutes, or until the broccoli is tender.
  3. Use an immersion blender to blend until smooth, leaving some broccoli pieces for texture.
  4. Return the blended soup to the pot, stir in the milk and cheddar cheese, and season with salt and pepper. Heat gently until the cheese is melted.
  5. Ladle the soup into bowls, and add your favorite toppings.

Notes

For the perfect flavor, experiment with different cheeses such as Monterey Jack or Gruyère. Avoid over-blending for a chunky texture. Pre-chop ingredients to save time.
