- Scoop out 1 cup of strawberry ice cream into a bowl. Let it soften slightly at room temperature for about 10-15 minutes.
- In a separate bowl, mix the sweet rice flour with enough water to form a sticky dough, thicker than pancake batter.
- Transfer the mochi mixture to a heatproof dish or steamer and steam for about 15-20 minutes until slightly translucent and sticky.
- Let the mochi cool for a few minutes, then place on a floured surface and flatten to about half an inch thick.
- Cut out circles from the flattened mochi dough using a round cookie cutter or glass. Place a scoop of softened strawberry ice cream in the center of each circle.
- Carefully fold the mochi dough around the ice cream and pinch to seal, ensuring there are no gaps.
- Freeze filled mochi for at least 30 minutes before serving.
