  2. In a separate bowl, mix the sweet rice flour with enough water to form a sticky dough, thicker than pancake batter.
  3. Transfer the mochi mixture to a heatproof dish or steamer and steam for about 15-20 minutes until slightly translucent and sticky.
  4. Let the mochi cool for a few minutes, then place on a floured surface and flatten to about half an inch thick.
  5. Cut out circles from the flattened mochi dough using a round cookie cutter or glass. Place a scoop of softened strawberry ice cream in the center of each circle.
  6. Carefully fold the mochi dough around the ice cream and pinch to seal, ensuring there are no gaps.
  7. Freeze filled mochi for at least 30 minutes before serving.
