  • 1 cup granulated sugar
  • 1 package (3.4 oz) instant vanilla pudding mix Ensure it's compatible with dietary needs.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the peanut butter, sugar, and instant pudding mix. Mix until smooth and well combined.
  3. Scoop out tablespoons of the dough and roll them into balls. Place the dough balls on a baking sheet lined with parchment paper, leaving enough space between each to allow for spreading.
  4. Flatten each ball slightly with a fork using a crisscross pattern.
  5. Bake in the preheated oven for 10-12 minutes or until the edges are lightly browned and the centers look set.
  6. Let cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store your cookies in an airtight container at room temperature for up to five days. To freeze, place layers of parchment paper between cookies in a freezer-safe container. They will stay fresh for about three months. Thaw at room temperature or microwave for a few seconds to regain freshness.
