  • 2 pounds potatoes (any variety, such as russet or Yukon gold) Choose a starchy variety for the best texture.
  • 1 cup ranch dressing Store-bought or homemade.
  • 2 cups shredded cheese (cheddar recommended) Feel free to mix it up with other types.

Preparation
  1. Preheat your oven to 375°F (190°C). Wash and peel (if desired) the potatoes, then cut them into bite-sized cubes.
  2. In a large mixing bowl, combine the cubed potatoes and ranch dressing. Stir until the potatoes are evenly coated.
  3. Pour half of the shredded cheese into the bowl and mix it in with the potatoes and ranch dressing.
Baking
  1. Transfer the potato mixture into a greased baking dish. Top with the remaining cheese. Cover the dish with aluminum foil to keep the moisture in.
  2. Place it in the preheated oven and bake for 20 minutes.
  3. After 20 minutes, remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden brown.
Serving
  1. Take the dish out of the oven and let it cool for a few minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. For longer storage, freeze in a freezer-safe bag. Reheat in the oven at 350°F (175°C) or in the microwave.
