For the donut holes
  • 2 ripe bananas 2 ripe bananas Look for bananas that are very soft for the best flavor.
  • 1 cup 1 cup pancake mix Use your favorite brand, just ensure it’s free from any forbidden ingredients.
  • Oil for frying Enough oil to submerge the donut holes halfway.

Preparation
  1. In a mixing bowl, mash the ripe bananas until smooth.
  2. Add 1 cup of pancake mix to the mashed bananas. Stir until combined, but don’t overmix; a few lumps are just fine.
Cooking
  1. In a frying pan or deep fryer, heat oil over medium heat.
  2. Using a tablespoon or a small cookie scoop, drop dough into the hot oil, about 3-4 at a time to avoid overcrowding. Fry until golden brown, approximately 2-3 minutes.
  3. Using a slotted spoon, transfer the donut holes to a plate lined with paper towels to drain excess oil.
Serving
  1. Once slightly cooled, roll them in sugar, drizzle honey, or sprinkle cinnamon for extra flavor.

Notes

Store in an airtight container at room temperature for about 2 days, or refrigerate for up to a week. Reheat in the microwave for 10-15 seconds, or in a preheated oven at 350°F for about 5 minutes.
