Ingredients

Main Ingredients
  • 1 lb Halal chicken breast or thighs, boneless and skinless, cut into thin strips Ensure all ingredients are halal-friendly.
  • 1 cup orzo pasta
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup olives, pitted and sliced
  • 1 cup tzatziki sauce (store-bought or homemade)
  • Salt and pepper, to taste
  • Olive oil, for cooking (to preference)

Method

Preparation
  1. In a medium saucepan, bring water to boil. Add the orzo and a pinch of salt. Cook according to package instructions, usually about 7-9 minutes, until al dente. Drain and set aside.
  2. In a skillet over medium heat, drizzle a little olive oil. Season the chicken strips with salt and pepper. Cook for 5-7 minutes or until golden brown and cooked through.
Assembly
  1. In large bowls, layer the cooked orzo first, followed by the cooked chicken.
  2. Artfully add diced cucumber, halved cherry tomatoes, sliced red onion, crumbled feta cheese, and olives.
  3. Generously drizzle tzatziki sauce over each bowl. Garnish with fresh herbs if desired.
  4. Mix the layers together if you like, or let everyone customize their own bowls. Instant satisfaction!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave for 1-2 minutes or on the stovetop to maintain chicken juiciness.
