Ingredients

Main Ingredients
  • 1 pound halal ground beef Opt for lean ground beef for a healthier option.
  • 1 can (15 oz) black beans, drained and rinsed Can use other beans if desired.
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes Include juice for added flavor.
  • 1 packet taco seasoning Store-bought or homemade.
  • 4 cups beef broth Can substitute with vegetable broth for a vegetarian version.

Method

Preparation
  1. In a large pot over medium heat, add the halal ground beef and cook until browned, about 5-7 minutes. Use a spatula to break it up into smaller pieces as it cooks.
  2. Stir in the black beans, kidney beans, and corn. Mix well to combine all the ingredients together.
  3. Pour in the diced tomatoes (with their juice) and stir everything together.
  4. Sprinkle the taco seasoning over the mixture and stir. Add the beef broth, mixing everything well.
  5. Bring the soup to a boil, then reduce the heat to low. Let it simmer uncovered for about 15 minutes, stirring occasionally.
  6. Once done, ladle the soup into bowls and serve with your favorite toppings.

Notes

For toppings, consider creamy avocado, sharp cheddar cheese, and lime wedges. You can substitute ground beef for turkey or chicken and add extra vegetables like bell peppers or zucchini.
