Ingredients

For the Gnocchi
  • 2 cups roasted sweet potato flesh (about 2 large sweet potatoes)
  • 2 cups all-purpose flour, plus more for dusting Use gluten-free flour for a gluten-free option.
  • 1 large egg
  • 1/2 cup grated parmesan Can substitute with vegan cheese for a plant-based option.
  • 1 tsp salt
  • 1/4 tsp ground nutmeg
For Cooking
  • 4 tbsp butter
  • 12 leaves fresh sage
  • Grated parmesan, to serve

Method

Preparation
  1. Roast your sweet potatoes at 400°F (200°C) for about 45 minutes or until soft. Allow them to cool, then scoop out the flesh into a mixing bowl.
  2. To the sweet potato, add the flour, egg, grated parmesan, salt, and nutmeg. Stir until a dough begins to form.
  3. Lightly dust your hands and work surface with flour. Transfer the dough and knead gently until it’s smooth and pliable, being careful not to overwork it.
  4. Divide the dough into smaller portions. Roll each portion into a long cylinder, about 1 inch in diameter. Cut into bite-sized pieces (approximately 1-inch intervals). You can shape them using a fork to create grooves.
Cooking
  1. Bring a large pot of salted water to a boil. Carefully drop the gnocchi into the boiling water. They’re done when they float to the surface, about 2-3 minutes.
  2. In a skillet, melt the butter over medium heat. Add the sage leaves and cook until fragrant and crispy. Toss the cooked gnocchi in the sage butter sauce.
  3. Plate the gnocchi, sprinkle with extra parmesan, and savor every bite!

Notes

Store leftover gnocchi in an airtight container in the fridge for up to 3 days. You can freeze uncooked gnocchi on a baking sheet; once frozen, transfer to a freezer bag for up to 2 months. Reheat gently in a pan or boiling water.
