Ingredients

Main Ingredients
  • 16 oz 1 package of gnocchi
  • 1 cup 1 cup of pumpkin puree canned or fresh
  • 0.5 pound 1/2 pound of Halal Italian sausage ground
  • 0.5 cup 1/2 onion chopped
  • 2 cloves 2 cloves garlic minced
  • 1 cup 1 cup spinach chopped
  • 0.5 cup 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil for sautéing

Method

Preparation
  1. In a pot of boiling salted water, cook the gnocchi according to the package instructions. Once they float to the surface, they are done! Drain and set aside.
  2. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until fragrant, about 2-3 minutes.
  3. Push the onion and garlic to the sides of the skillet and add the Halal Italian sausage. Break it apart with a spoon and cook until browned and no longer pink. This should take about 5-7 minutes.
  4. Once the sausage is cooked, stir in the pumpkin puree. Mix well and let it cook for a few minutes so flavors can meld.
  5. Add the cooked gnocchi and chopped spinach to the skillet. Toss until everything is combined and the spinach has wilted. Season with salt and pepper to taste.
  6. Remove from heat and sprinkle grated Parmesan over the top, stirring to combine.
  7. Serve immediately and enjoy your warm bowl of Pumpkin Sausage Gnocchi!

Notes

If Halal Italian sausage isn’t available, consider using ground chicken or turkey with Italian seasoning to keep it flavorful. Make sure not to overcook the gnocchi as they can become mushy. Stir well when combining the pumpkin and sausage mixture to ensure every gnocchi piece picks up all those delicious flavors. Leftovers can be refrigerated for up to 3 days or frozen for up to a month. Reheat in a skillet with a splash of water to restore creaminess.
