Method
Caramelizing the Onions
- In a large skillet, melt 3 tablespoons of butter combined with 1 tablespoon of olive oil over medium heat.
- Add the thinly sliced onions and sprinkle with granulated sugar and 1/2 teaspoon of salt.
- Stir occasionally, allowing the onions to become golden brown and sweetened (about 15-20 minutes).
- Remove them from the heat and set aside.
Preparing the Patties
- In a bowl, combine the ground beef with remaining salt, black pepper, and garlic powder.
- Form them into four equal-sized patties, pressing slightly in the center to ensure even cooking.
Cooking the Patties
- Heat a skillet over medium-high heat.
- Cook the beef patties for about 4-5 minutes on each side, or until they reach your desired doneness.
- In the last minute of cooking, place a slice of provolone cheese on each patty to melt.
Making the Cheese Sauce
- In another saucepan, melt 2 tablespoons of butter over medium heat.
- Whisk in the flour and cook for about 1 minute.
- Slowly add in the milk, whisking constantly until thickened.
- Remove from heat and stir in grated parmesan, shredded gruyere, Dijon mustard, and ground nutmeg.
- Mix until smooth and creamy.
Assembling the Burgers
- Toast the brioche buns slightly.
- Place each cheesy patty on the bottom half of a bun, topping with sweet caramelized onions.
- Serve with a bowl of the creamy cheese sauce for dipping.
Notes
For substitutions, cheddar or mozzarella works wonderfully in the sauce. Avoid crowding the skillet while cooking patties for a better sear. Leftovers can be refrigerated for up to 3 days and frozen for up to 2 months.
