Ingredients

For the Chicken
  • 2 breasts chicken breasts, diced
  • 1/4 cup honey
  • 2 tablespoons fresh ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
For the Vegetables and Rice
  • 2 cups cooked rice Use your choice of rice.
  • 1 cup mixed vegetables (e.g., bell peppers, broccoli, carrots) Choose a mix based on preference.
  • Green onions to taste for garnish
  • Sesame seeds to taste for garnish

Method

Preparation
  1. Cook your rice according to package instructions and set aside.
  2. In a medium bowl, combine honey, grated ginger, and soy sauce. Add the diced chicken, ensuring each piece is well-coated. Let it marinate for at least 10 minutes while you prepare the vegetables.
Cooking
  1. In a large skillet, heat the olive oil over medium heat. Add your mixed vegetables and cook for about 3-4 minutes until they are tender but still crisp.
  2. Push the vegetables to one side of the skillet. Add the marinated chicken to the other side and cook for about 5-7 minutes, stirring frequently, until the chicken is cooked through and golden.
Serving
  1. In a large serving bowl, layer the cooked rice, pour the chicken and vegetables on top, and garnish with chopped green onions and sesame seeds. Serve hot and enjoy every mouthful!

Notes

Substitutions: Use ground ginger if fresh ginger is unavailable. Prepare ingredients ahead of time to streamline cooking. Avoid overcooking the chicken for best results. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
