Ingredients

Carrots Preparation
  • 4 large carrots, peeled and cut into sticks Ensure uniform size for even cooking.
  • 3 tablespoons honey
  • 3 tablespoons olive oil
  • to taste salt and pepper
Whipped Feta Ingredients
  • 1 cup feta cheese
  • 1/4 cup cream cheese
  • 1/4 cup Greek yogurt Regular yogurt can be used as a substitute.
  • 2 tablespoons lemon juice
  • to taste salt and pepper
  • Fresh herbs for garnish (optional)

Method

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the carrot sticks with olive oil, honey, salt, and pepper. Toss until evenly coated.
Roasting
  1. Spread the coated carrots on a baking sheet in a single layer.
  2. Roast for about 20-25 minutes, or until tender and caramelized, turning halfway through.
Whipping Feta
  1. While the carrots are roasting, blend feta cheese, cream cheese, Greek yogurt, lemon juice, salt, and pepper in a food processor until creamy.
  2. Add more yogurt if a lighter consistency is desired.
Serving
  1. Once the carrots are done, remove from the oven and let them cool slightly.
  2. Pair warm carrots with a generous dollop of whipped feta and garnish with fresh herbs if desired.

Notes

For a dairy-free version, consider using cashew cream as a whipped topping. Avoid overcrowding the baking sheet during roasting to achieve a crispy texture. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven at 350°F (175°C) for about 10 minutes.
