Ingredients

Main Ingredients
  • 1 pound Halal Italian sausage or ground beef for an alternative
  • 1 unit onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can diced tomatoes (14.5 oz) including the juice
  • 2 cups spinach (fresh or frozen)
  • 1 package tortellini (about 9-12 oz)
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • to taste Grated Parmesan cheese for garnish

Method

Preparation
  1. In a skillet, over medium heat, brown the Halal Italian sausage until it’s fully cooked, breaking it up with a spoon.
  2. Add the chopped onion and minced garlic to the skillet with the sausage. Cook until the onion softens and becomes translucent, about 3-4 minutes.
  3. Transfer the sausage mix to your crockpot.
  4. Pour in the chicken broth and add the can of diced tomatoes (including the juice), spinach, tortellini, Italian seasoning, salt, and pepper.
Cooking
  1. Cover and cook on low for about 6 hours or high for about 3-4 hours. Stir occasionally to keep things blended nicely.
  2. Before serving, taste and adjust seasoning if necessary. Ladle into bowls and sprinkle with grated Parmesan for the finishing touch!

Notes

For a lighter version, substitute Halal sausage with ground turkey or chicken. If you prefer a firmer tortellini, add it during the last hour of cooking. Ensure you sauté the sausage first to develop a richer flavor. Store leftovers in an airtight container for up to 3 days, or freeze in individual portions for up to a month.
