Preparation
- Start by washing and halving your baby potatoes. Mince the garlic and measure out your other ingredients. Place the chicken breasts at the bottom of the crockpot.
- Next, scatter the halved baby potatoes over the chicken.
- In a separate bowl, blend the melted butter, minced garlic, chicken broth, salt, and pepper.
- Pour the fragrant mixture over the chicken and potatoes.
- Sprinkle half of your grated parmesan cheese over the top. Reserve the other half for later!
Cooking
- Cover and cook on low for 6-7 hours or on high for 3-4 hours.
Finishing Touch
- Once cooked, sprinkle the remaining parmesan cheese on top and garnish with chopped parsley before serving.
Notes
Ingredient Substitutions: Use cauliflower florets for a lower-carb version instead of potatoes, or replace the chicken breasts with thighs for a juicier outcome. Ensure to check the doneness about 30 minutes before the cooking time ends. Avoid overcrowding the crockpot; if cooking for a larger family, consider making two batches instead of one.
